1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper, to taste

1 red bell pepper, roasted (store-bought or homemade)

1 cup fresh spinach or mixed greens

1/2 cup crumbled feta cheese (optional)

4 large whole wheat tortillas or wraps

2 tablespoons tahini or hummus

Lemon wedges, for serving

Prepare the Chickpeas: In a medium-sized mixing bowl, use a fork or potato masher to mash the drained chickpeas until they are slightly chunky, retaining some texture for a delightful bite.
