Ingredients

1 bag (10 oz) tortilla chips

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) chili (spicy or mild, based on preference)

1 small jalapeño, thinly sliced (adjust quantity according to spice preference)

1/2 small red onion, finely diced

1/2 cup black olives, sliced

1 ripe avocado, diced

1 cup pico de gallo or fresh salsa

1/4 cup fresh cilantro, chopped

1/2 cup sour cream

1 lime, cut into wedges

Salt and pepper, to taste

Instructions

Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s ready for baking the nachos.

Layer the Chips: On a large baking sheet or oven-safe platter, spread a single, even layer of tortilla chips, ensuring maximum coverage for the toppings.

Add Chili: Spoon the canned chili evenly over the arrangement of chips, making sure each chip gets a taste of the chili.

Cheese It Up: Generously sprinkle the shredded sharp cheddar and Monterey Jack cheeses over the chili-coated chips, covering as many chips as possible for a cheesy experience.

Bake: Place the loaded nachos in the preheated oven and bake for about 10-12 minutes, or until the cheese has melted and is bubbling, creating a decadent topping.

Prepare Toppings: While the nachos are baking, create a fresh topping mix. In a small bowl, combine the diced avocado, chopped cilantro, and finely diced red onion. Season this mash with salt and pepper to enhance the flavors.

Add Jalapeños and Olives: Once the nachos are done baking, remove them from the oven and sprinkle the sliced jalapeños and black olives generously over the cheesy nachos.

Finish Off: Top the nachos with the prepared avocado mixture, adding dollops of sour cream, and finish with a generous serving of pico de gallo or fresh salsa.

Garnish and Serve: For a beautiful presentation, garnish with additional chopped cilantro, squeeze fresh lime juice over the entire dish for a zesty kick, and serve the nachos hot and fresh!
