1 block (14 oz) extra-firm tofu, pressed and drained

1/4 cup honey (or maple syrup for a vegan alternative)

1/4 cup low-sodium soy sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons vegetable oil (or sesame oil for added flavor)

1 bell pepper, sliced (choose red or yellow for sweetness)

1 cup broccoli florets

1 carrot, julienned

1 cup snap peas

2 green onions, chopped

Sesame seeds, for garnish

Cooked jasmine rice or quinoa, for serving

Prepare the Tofu: Begin by cutting the pressed tofu into bite-sized cubes. Use paper towels to pat the tofu dry, ensuring excess moisture is removed for better browning.

    Make the Sauce: In a small bowl, whisk together the honey (or maple syrup), low-sodium soy sauce, minced garlic, and minced ginger until well combined. Set this flavorful mixture aside.

      Cook the Tofu: Drizzle 1 tablespoon of vegetable oil into a large skillet or wok and heat it over medium-high heat. Once the oil is hot, add the tofu cubes in a single, even layer. Allow them to cook undisturbed for approximately 4-5 minutes until one side turns golden brown. Carefully flip the tofu cubes and continue cooking for another 4-5 minutes until they are crispy and golden on all sides. Once done, remove the tofu from the pan and place it on a plate.

        Stir Fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Toss in the sliced bell pepper, broccoli florets, julienned carrot, and snap peas. Stir-fry the vegetables for about 3-4 minutes, stirring constantly, until they are vibrant, tender, and still maintain some crispness.

          Combine Tofu and Sauce: Return the crispy tofu back into the pan along with the sautéed vegetables. Pour the prepared honey garlic sauce over the stir-fry. Gently toss everything together to ensure each piece is well-coated with the sauce. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.
