Ingredients

1 lb (450g) ground chicken

2 tablespoons low sodium soy sauce

2 tablespoons honey

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water

1/2 cup green onions, finely chopped

1/2 cup carrots, shredded

1/2 cup bell peppers, diced (any color)

1 tablespoon sesame seeds (optional, for garnish)

1 head of butter or iceberg lettuce (to create cups)

Fresh cilantro leaves (optional, for garnish)

Instructions

Prepare the Sauce: In a small bowl, combine the soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and the cornstarch-water mixture. Whisk thoroughly until smooth and homogeneous. Set aside for future use.

Cook the Chicken: In a large skillet, heat over medium-high heat until hot. Add the ground chicken. Cook, stirring occasionally, for about 5-7 minutes or until the chicken is browned and cooked through. Use a spatula to break the chicken into small pieces as it cooks to ensure even browning.

Add the Sauce: Once the chicken is no longer pink and cooked through, pour the prepared sauce over the chicken. Stir well to ensure the chicken is evenly coated. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.

Incorporate Veggies: Add the finely chopped green onions, shredded carrots, and diced bell peppers to the skillet. Stir well and cook for an additional 2-3 minutes. This will help soften the vegetables just a touch while keeping them crisp and colorful.

Assemble Lettuce Cups: Carefully separate the lettuce leaves from the head, trying to keep them whole. Spoon a generous portion of the sticky honey soy chicken mixture into the center of each lettuce leaf, creating delightful cups.

Garnish & Serve: If desired, sprinkle sesame seeds and fresh cilantro leaves over the filled lettuce cups. Arrange the cups artfully on a serving platter for an inviting presentation. Serve immediately and enjoy!
