1 lb (450g) chicken breast, diced into bite-sized pieces

1 cup fresh pineapple, diced into small chunks

1 tablespoon vegetable oil

2 cloves garlic, minced

1 small onion, finely diced

1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons rice vinegar

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)

1 package (17.3 oz) puff pastry sheets (contains 2 sheets)

1 egg, beaten (for egg wash)

Sesame seeds, for garnish

Instructions
 

Prepare the Chicken Filling:

    - Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the diced chicken and cook, stirring frequently, until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside, allowing it to cool slightly.

      Make the Sticky Sauce:

          - Add the diced pineapple to the skillet and cook for an additional 2-3 minutes until the pineapple pieces soften slightly.

            - Pour in the soy sauce, brown sugar, rice vinegar, and sesame oil. Stir to combine and bring the mixture to a gentle simmer.

              - Once simmering, add the cooked chicken back to the skillet. Mix well to coat the chicken thoroughly with the sauce.
