1 cup cream cheese, softened at room temperature

1/2 cup Greek yogurt

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup strawberries, hulled and diced

1 cup blueberries, fresh or frozen (thawed)

1 cup kiwi, peeled and diced

1 cup pineapple, fresh or canned (drained well and diced)

1/4 cup shredded coconut (optional for added flavor)

1/4 cup granola (for an extra crunch)

Prepare the Bell Peppers: Preheat your oven to 350°F (175°C). Carefully slice the tops off the bell peppers and remove the seeds and white membranes. Arrange them upright in a baking dish that’s large enough to hold all four peppers.

    Make the Creamy Filling: In a large mixing bowl, combine the softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract. Use a hand mixer or whisk to blend until the mixture is smooth, creamy, and well-combined.

      Add the Fruit: Gently fold in the diced strawberries, blueberries, diced kiwi, and pineapple into the creamy filling. Stir until the fruit is evenly distributed throughout the mixture.
