Ingredients

2 cups rolled oats

1 cup almond flour

1/2 cup brown sugar

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted (or use coconut oil for a vegan alternative)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups peeled and diced apples (approximately 3 medium apples)

1 tablespoon lemon juice

1/2 teaspoon ground nutmeg (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, ensuring there is some overhang to facilitate easy removal after baking.

Prepare the Dry Ingredients: In a large mixing bowl, mix together the rolled oats, almond flour, brown sugar, salt, ground cinnamon, and ground nutmeg (if using). Stir well until all dry ingredients are thoroughly combined.

Mix the Wet Ingredients: In a separate bowl, whisk together the melted butter (or coconut oil), honey (or maple syrup), and vanilla extract until the mixture is smooth and well combined.

Combine Dry and Wet Ingredients: Gradually pour the wet mixture into the dry mixture, stirring gently until everything is evenly mixed. Expect a crumbly texture.

Prepare the Apples: In another bowl, toss the diced apples with lemon juice to keep them from browning. For added texture and flavor, you can mix in the chopped walnuts or pecans at this stage.

Layer the Mixture: Press about two-thirds of the oat mixture firmly into the bottom of the lined baking pan, forming a solid base layer. Evenly distribute the diced apples over this base layer, and then sprinkle the remaining oat mixture on top, lightly pressing it down.

Bake: Place the baking pan in the preheated oven and bake for 25 to 30 minutes, or until the top is a lovely golden brown and the apples are tender to the bite.

Cool and Slice: Once baked, allow the bars to cool completely in the pan. Carefully lift them out using the parchment paper overhang and slice them into squares or rectangles as desired.

Storage: Store the bars in an airtight container at room temperature for up to a week. For longer shelf life, refrigerate the bars to maintain freshness.
