½ cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 ½ cups fresh blueberries (or frozen if fresh are unavailable)

Zest of 1 lemon

1 tablespoon lemon juice

½ teaspoon ground cinnamon (optional)

2 tablespoons coarse sugar for topping (optional)

Preheat Your Oven: Begin by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with cooking spray to ensure easy removal after baking.

    Mix Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon (if using). Mix until well combined and set aside for later use.

      Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream the softened butter along with the granulated sugar and brown sugar. Beat this mixture for about 2-3 minutes until it becomes light, fluffy, and well incorporated.
