1 lb (450g) skinless, boneless salmon fillet

1/4 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon minced garlic

1 teaspoon freshly grated ginger

1 tablespoon olive oil

Salt and pepper, to taste

1 head of butter lettuce or romaine lettuce, leaves separated and cleaned

1/2 cup shredded carrots

1/2 cup diced cucumber

1/4 cup freshly chopped cilantro

1 jalapeño, thinly sliced (optional for added heat)

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a medium mixing bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, minced garlic, and grated ginger until well blended.

    Marinate the Salmon: Place the salmon fillet in a shallow dish and pour the marinade over it, ensuring the salmon is fully coated. Cover and let it marinate for at least 20 minutes at room temperature, allowing the flavors to penetrate the fish.

      Cook the Salmon: Heat the olive oil in a large non-stick skillet over medium-high heat. Once the oil is shimmering, carefully remove the salmon from the marinade (keep the marinade for later) and place it in the skillet. Cook for approximately 4-5 minutes on each side, or until the salmon is just cooked through and flakes easily with a fork.

        Make the Sauce: After the salmon has cooked, pour the reserved marinade into the same skillet. Bring the mixture to a gentle simmer over low heat and allow it to cook for 2-3 minutes, stirring occasionally, until it slightly thickens. Remove the skillet from the heat.
