2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt (or substitute with coconut yogurt for a dairy-free option)

1/4 cup honey (or use maple syrup for a vegan alternative)

1/2 cup coconut milk (optional, for extra creaminess)

1 teaspoon vanilla extract

A pinch of salt

Optional: Fresh chopped mint leaves for garnish

Instructions
 

In a high-speed blender, combine the peeled and diced mangoes, Greek yogurt, honey (or maple syrup), coconut milk (if using), vanilla extract, and a pinch of salt. Blend on high until the mixture is completely smooth and creamy. Pause and taste the mixture; if you prefer it sweeter, add an extra drizzle of honey or maple syrup and blend again to incorporate.

    Carefully pour the blended mango yogurt mixture into popsicle molds, ensuring to leave a small gap at the top of each mold to allow for expansion as they freeze.

      For an added burst of flavor and a lovely visual touch, sprinkle some finely chopped mint leaves into the molds before the mixture sets.

        Insert popsicle sticks into each mold, ensuring they are centered. Place the molds upright in the freezer and allow them to chill for at least 4 to 6 hours until they are completely frozen solid.

          When you’re ready to enjoy your tasty popsicles, gently run warm water over the outside of the molds for a few seconds to assist in releasing the popsicles. Carefully pull each popsicle out, using the stick for leverage.
