1 teaspoon baking powder

¾ cup warm water

2 tablespoons olive oil

Sweet Potato & Kale Pesto:

1 medium sweet potato (approximately 1 cup, cooked and mashed)

2 cups fresh kale, stems removed

½ cup walnuts (or pine nuts for a different flavor)

2 garlic cloves

½ cup Parmesan cheese, grated (or nutritional yeast for a vegan alternative)

⅓ cup olive oil

Juice of 1 lemon

Salt and pepper, to taste

Toppings:

1 cup cherry tomatoes, halved

½ cup feta cheese, crumbled (optional)

Fresh basil leaves for garnish

Instructions
 

Make the Flatbread:
