1 lb ground turkey

2 medium sweet potatoes, peeled and diced into 1/2-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 cup fresh spinach, roughly chopped

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder

Salt and freshly ground black pepper, to taste

2 tbsp extra virgin olive oil

Optional toppings: sliced avocado, thinly sliced green onions, or crumbled feta cheese

Instructions
 

Cook the Turkey: In a large skillet over medium-high heat, pour in 1 tablespoon of olive oil. Once hot, add the ground turkey. Sauté for 5-7 minutes, stirring occasionally to break the meat into smaller pieces. When the turkey is browned and cooked through, season with salt, pepper, smoked paprika, ground cumin, and chili powder. Once seasoned, remove the turkey from the skillet and transfer it to a plate, setting it aside.

    Sauté the Vegetables: Without cleaning the skillet, add the remaining tablespoon of olive oil. Toss in the chopped onion and diced bell pepper. Sauté these vegetables for about 3-4 minutes, allowing them to soften and become aromatic. After the onion and pepper have softened, add the minced garlic and stir for an additional 30 seconds, or until fragrant.

      Cook the Sweet Potatoes: Next, add the diced sweet potatoes to the skillet, stirring well to combine with the sautéed onion and bell pepper. Cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are fork-tender and have developed a slight golden color.

        Combine Ingredients: Return the cooked turkey to the skillet along with the chopped spinach. Mix everything thoroughly, and continue to cook for another 2-3 minutes, or until the spinach has wilted and the ingredients are heated through.
