1 tablespoon fresh lemon juice

Optional toppings: Red pepper flakes, roasted pumpkin seeds, microgreens, or a perfectly poached egg

Prepare the Sweet Potato:

    Preheat your oven to 400°F (200°C). Start by washing and scrubbing the sweet potato thoroughly to remove any dirt. Slice the sweet potato into rounds, approximately 1/2-inch thick. Arrange these rounds in a single layer on a baking sheet lined with parchment paper for easy cleanup.

      Season the Sweet Potato:
