Sweet Potato Egg Toasts

2 medium sweet potatoes, peeled and sliced into 1/2-inch thick rounds

4 large eggs

1 ripe avocado, mashed until smooth

1 tablespoon extra virgin olive oil

Salt and freshly ground black pepper, to taste

1/2 teaspoon smoked paprika (optional for added flavor)

Fresh cilantro leaves or parsley, finely chopped, for garnish

Red pepper flakes, for garnish (optional, for heat)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help caramelize the sweet potatoes.

    Prepare the Sweet Potatoes: On a large baking sheet, lay out the sweet potato slices in a single, even layer. Drizzle them with olive oil and season generously with salt, freshly ground black pepper, and smoked paprika (if using). Use your hands to toss the slices until they are evenly coated with the oil and seasonings.

      Roast the Sweet Potatoes: Place the baking sheet in the preheated oven and roast the sweet potatoes for about 20-25 minutes. Make sure to flip the slices halfway through cooking to promote even browning. They should emerge tender and slightly caramelized at the edges.

        Cook the Eggs: While the sweet potatoes are roasting, prepare the eggs according to your liking. You can poach, fry, or scramble them. For perfectly poached eggs, fill a pot with water and bring it to a gentle simmer. Add a dash of vinegar to help the egg whites set faster. Carefully crack each egg into the simmering water and cook for 3-4 minutes, until the whites are fully set but the yolks remain runny.
