2 tablespoons chia seeds

1 cup rolled oats

1/4 cup unsweetened coconut flakes (optional for added texture)

1/4 teaspoon salt

1 teaspoon pure vanilla extract

1/4 teaspoon ground cinnamon (optional for warmth)

1/4 cup coconut oil or unsalted butter, melted and slightly cooled

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by lining it with parchment paper—ensure the paper overhangs on two sides for easy removal after baking.

    Prepare the Raspberry Filling: In a small saucepan set over medium heat, combine the raspberries and honey (or maple syrup). Stir occasionally and cook for about 5-7 minutes, until the raspberries soften and release their juices, creating a sauce. Remove from heat and stir in the chia seeds. Allow the mixture to sit and thicken as it cools.

      Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, coconut flakes (if using), salt, and ground cinnamon (if desired). Stir well to ensure an even distribution of ingredients.

        Incorporate the Wet Ingredients: Pour the melted coconut oil (or unsalted butter) and pure vanilla extract into the dry mixture. Use a spatula or your hands to mix thoroughly until a crumbly dough forms.
