1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ground ginger

1 cup red cabbage, finely shredded

1/2 cup fresh cilantro, chopped

1/4 cup green onions, sliced thin

1 tablespoon sesame seeds, for garnish

For the Dressing:

3 tablespoons rice vinegar

2 tablespoons soy sauce (or tamari)

1 tablespoon sesame oil

1 tablespoon maple syrup (or honey)

Salt and freshly ground pepper to taste

For Serving:

Lettuce leaves (e.g., butter or romaine) for wraps

Chopped peanuts (optional, for garnish)

Instructions

Prepare the Tofu Satay:

    - In a mixing bowl, combine the peanut butter, soy sauce, lime juice, maple syrup, sesame oil, garlic powder, ground ginger, and crushed red pepper flakes. Whisk until smooth to create a marinade.

      - Place the tofu strips in the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes, or for enhanced flavor, marinate overnight.

        Cook the Tofu:

          - Heat a grill pan or non-stick skillet over medium heat. Once hot, add the marinated tofu strips to the pan.

            - Cook the tofu for about 4-5 minutes on each side, or until golden brown and slightly crispy. Once cooked, remove from heat and set aside to cool slightly.

              Make the Rainbow Slaw:

                - In a large mixing bowl, combine the shredded green cabbage, red cabbage, carrots, bell peppers, chopped cilantro, sliced green onions, and sesame seeds.

                  - In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and maple syrup. Add salt and pepper to taste.

                    - Drizzle the dressing over the slaw mixture and toss gently until all ingredients are evenly coated.

                      Assemble the Wraps:

                        - Take a lettuce leaf and lay it flat on a clean surface. Spoon a generous portion of the rainbow slaw into the center of the leaf, then top with a few pieces of grilled tofu satay.

                          - Optionally, sprinkle chopped peanuts on top for an added crunch.

                            - Fold the sides of the lettuce leaf in and roll it up from the bottom to create a wrap. Repeat this process with the remaining lettuce leaves and filling.

                              Serve and Enjoy:

                                - Serve the wraps immediately, garnished with extra sesame seeds or chopped cilantro if desired. Delight in these vibrant, healthy, and scrumptious Tofu Satay Rainbow Slaw Wraps!
