14 oz firm tofu, pressed and cut into 1-inch cubes

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon pure maple syrup

2 cloves garlic, finely minced

1 teaspoon fresh ginger, finely grated

1 tablespoon rice vinegar

1 red bell pepper, cut into 1-inch chunks

1 medium zucchini, sliced into rounds about 1/2 inch thick

8-10 skewers (wooden or metal)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1/4 cup red onion, finely chopped

1 jalapeño, deseeded and minced (adjust for spice preference)

2 tablespoons fresh cilantro, roughly chopped

1 tablespoon fresh lime juice

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling. During this time, chop the red bell pepper into 1-inch chunks and slice the zucchini into rounds approximately 1/2 inch thick.
