1 cup polenta (cornmeal)

4 cups vegetable or chicken broth

1 cup milk (or plant-based milk for a vegan option)

1 cup shredded sharp cheddar cheese

1 cup crumbled Italian sausage (or plant-based sausage)

1 medium onion, diced

3 cloves garlic, minced

1 cup diced bell peppers (any mix of colors)

1 cup fresh spinach, roughly chopped

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional, for added heat)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Broth Base: In a medium saucepan, bring the vegetable or chicken broth to a rolling boil. Gradually whisk in the polenta, ensuring no lumps form. Immediately reduce the heat to low and stir continuously for 5-7 minutes until the polenta thickens and easily pulls away from the sides of the saucepan.

    Incorporate the Creaminess: Remove the saucepan from heat. Stir in the milk and half of the shredded cheddar cheese until the mixture is smooth and creamy. Season with salt and pepper to your liking. Set the polenta aside to cool slightly.

      Cook the Sausage and Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until it turns translucent, about 3-4 minutes. Incorporate the minced garlic, followed by the diced bell peppers and crumbled sausage. Cook for an additional 7-10 minutes, stirring occasionally, until the sausage is browned and fully cooked.

        Add Spinach and Seasoning: Stir in the chopped spinach, dried oregano, and red pepper flakes, if using. Cook for an additional 2-3 minutes, or until the spinach has wilted. Once done, remove the skillet from heat.

          Combine Layers: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish. Spread half of the creamy polenta evenly across the bottom of the dish. Layer the cooked sausage and vegetable mixture on top, then add the remaining polenta, smoothing it out gently.
