Prepare the Vegetables: Begin by thoroughly washing all your fresh produce. Dice the zucchinis into small cubes, chop the red bell pepper, finely mince the red onion, and halve the cherry tomatoes. If you’re using fresh corn, either grill or boil the corn cobs for a few minutes and then carefully slice off the kernels.

    Make the Dressing: In a small bowl, combine the olive oil, freshly squeezed lime juice, ground cumin, and a generous pinch of salt and pepper. Whisk these ingredients together until they are well blended. Taste the dressing and adjust the seasoning if desired.
