Ingredients

1 cup fresh spinach, finely chopped

1 cup roasted red peppers, diced (store-bought or homemade)

1 cup cream cheese, softened to room temperature

1 cup sour cream

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, finely grated

2 cloves garlic, minced

1 teaspoon onion powder

½ teaspoon red pepper flakes (optional, for added heat)

Salt and black pepper to taste

Fresh parsley or cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). This will ensure it’s hot and ready for baking the dip.

Combine the Creamy Base: In a large mixing bowl, add the softened cream cheese and sour cream. Using a spatula or an electric hand mixer, mix them together until the blend is smooth and creamy, ensuring there are no lumps.

Incorporate Ingredients: Add the finely chopped spinach, diced roasted red peppers, minced garlic, onion powder, and if you enjoy a little spice, the red pepper flakes. Stir in half of the shredded mozzarella cheese as well. Mix thoroughly until all ingredients are well combined.

Season to Taste: Add a pinch of salt and a dash of black pepper, tasting the mixture as you go. Adjust the seasoning according to your preference for flavor.

Transfer to Baking Dish: Spoon the dip mixture into an appropriately sized baking dish (an 8x8-inch or similar works well). Spread the mixture evenly across the dish for consistent baking.

Add the Cheesy Top: Evenly sprinkle the remaining shredded mozzarella and the grated Parmesan cheese over the surface of the dip. This will create a deliciously gooey and cheesy crust.

Bake to Perfection: Place the baking dish in the preheated oven and bake for 20-25 minutes. You’re looking for the dip to be bubbly and for the cheese on top to melt and develop a light golden color.

Finish with Freshness: Once baked, carefully remove the dip from the oven and let it cool for a few minutes. Just before serving, garnish with freshly chopped parsley or cilantro for a pop of color and freshness.

Serving Suggestions: This delightful dip is best enjoyed warm. Serve it alongside a variety of dippers such as crunchy tortilla chips, warm pita bread, or fresh vegetable sticks like carrots and celery for a delectable snack or appetizer!
