Ingredients

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup shredded mozzarella cheese, plus an additional 1/2 cup for topping

1/2 cup cream cheese, softened to room temperature

1/4 cup plain Greek yogurt

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

1 tablespoon fresh lemon juice

Salt and freshly cracked black pepper, to taste

1 tablespoon olive oil (for the dish)

Fresh parsley, chopped (for garnish)

Tortilla chips or assorted vegetable sticks (for dipping)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to ensure it’s hot enough for baking.

Blend the Ingredients: In a food processor, combine the drained white beans, 1 cup of shredded mozzarella cheese, softened cream cheese, Greek yogurt, minced garlic, dried oregano, smoked paprika, lemon juice, salt, and black pepper. Pulse the mixture until it is completely smooth and creamy, stopping occasionally to scrape down the sides of the bowl for even blending.

Prepare the Baking Dish: Lightly drizzle the olive oil on the bottom of an oven-safe baking dish to prevent sticking. Carefully pour the creamy bean mixture into the prepared dish and spread it out evenly, ensuring an even surface for baking.

Add Cheese on Top: Generously sprinkle the additional 1/2 cup of mozzarella cheese over the top of the dip. This layer will melt into a delightful, gooey blanket as it bakes.

Bake the Dip: Place the baking dish in the preheated oven and bake for 20-25 minutes. The dip should be heated throughout, and the cheese topping will become golden and bubbly.

Garnish and Serve: Once baked, remove the dish from the oven and allow it to cool for a minute. Garnish with freshly chopped parsley for a pop of color before serving. Enjoy this warm, cheesy white bean dip alongside crispy tortilla chips or fresh vegetable sticks for dipping!
