Ingredients

2 cups mixed mushrooms (such as shiitake, cremini, and button), sliced

2 large leeks, using only the white and light green parts, thoroughly cleaned and sliced

2 cloves of garlic, minced

1 tablespoon olive oil

1 tablespoon unsalted butter

1 cup heavy cream

1 cup grated Gruyère cheese, plus additional for topping

1/2 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1/4 teaspoon freshly grated nutmeg

Salt and black pepper, to taste

1/2 cup Panko breadcrumbs (for extra crunch)

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the oven: Set your oven to 375°F (190°C) to warm in preparation for baking.

Sauté the vegetables: In a large skillet, add the olive oil and unsalted butter, and heat over medium. Once hot, add the sliced leeks and minced garlic. Sauté for about 5-7 minutes, stirring occasionally, until the leeks become tender and translucent.

Cook the mushrooms: Introduce the sliced mushrooms to the skillet. Continue to sauté for an additional 5-10 minutes until the mushrooms are golden brown and have released some of their moisture. Season the mixture with salt, black pepper, and fresh thyme. Finally, stir in the nutmeg for a hint of warmth and flavor.

Prepare the cream mixture: In a separate bowl, blend together the heavy cream and half of the grated Gruyère cheese until well combined.

Combine and assemble: Lightly grease a baking dish. Spread the sautéed mushroom and leek mixture evenly across the bottom. Pour the cream mixture over the vegetables, ensuring it is evenly distributed. Top with the remaining Gruyère and sprinkle with Parmesan cheese. Finish by sprinkling the breadcrumbs over the top to create a deliciously crunchy crust.

Bake: Transfer the baking dish to your preheated oven and bake for 25-30 minutes, or until the top is beautifully golden and bubbling.

Garnish and serve: Once done, remove the gratin from the oven and allow it to cool slightly. For a pop of color and freshness, garnish with chopped parsley before serving.

                  - Presentation Tips: Consider serving the gratin directly from the baking dish for a rustic look, or spooning portions onto individual plates. A drizzle of olive oil or a sprinkle of extra thyme can enhance the visual appeal. Enjoy your warm, savory gratin!
