2 tablespoons fresh lime juice

Instructions
 

Prepare the Watermelon Layer:

    - In a high-speed blender, add the diced watermelon, freshly squeezed lime juice, and honey (if desired). Blend on high until the mixture is smooth and homogeneous. Taste the blend and adjust sweetness as necessary.

      Strain the Watermelon Mixture:

        - For a smoother consistency, strain the watermelon puree through a fine mesh sieve into a clean bowl to remove any pulp. This step is optional and can be skipped based on your texture preference.

          Create the Kiwi Layer:

            - In a separate bowl, add the sliced kiwi along with the coconut water (or a splash of regular water if you prefer). Blend until smooth. For a sweeter flavor, mix in agave syrup to taste.

              Layering the Pops:

                - Begin by filling your popsicle molds with a layer of the watermelon puree, making sure to fill each mold approximately halfway. Lightly tap the molds on the countertop to release any trapped air bubbles for an even layer.

                  - Transfer the molds to the freezer and let them set for about 1-2 hours, or until the watermelon layer is firm but not fully frozen.

                    Add the Kiwi Layer:
