4 large flour tortillas

      Assemble the Quesadillas:

        Place two flour tortillas on a clean, flat surface. On each tortilla, sprinkle 3/4 cup of shredded cheese evenly. If desired, add 1/2 cup of shredded cooked chicken on top of the cheese. Spoon a generous portion of the prepared pineapple salsa over the chicken, then add another 3/4 cup of cheese on top. Finally, place a second tortilla over each quesadilla, pressing down gently to hold the fillings in place.

          Cook the Quesadillas:

            Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once the oil is shimmering, carefully place one assembled quesadilla into the skillet.
