4 large flour tortillas

2 cups shredded cheese (choose either cheddar or Monterey Jack)

1 tablespoon olive oil

1 ripe avocado, sliced (for garnish)

Sour cream or Greek yogurt, for serving (optional)

Instructions
 

Prepare the Pineapple Salsa:

    - In a medium-sized bowl, combine the diced pineapple, finely chopped red onion, minced jalapeño, and fresh cilantro.

      - Squeeze the juice of one lime over the mixture. Add salt to taste, keeping in mind that the flavors will concentrate as the salsa sits. Gently stir to combine, and let it rest for about 10 minutes to allow the flavors to meld together.

        Make the Quesadillas:

          - Heat a large skillet over medium heat and add the tablespoon of olive oil, swirling to coat the pan.

              - Spoon half of the prepared pineapple salsa over the cheese layer, then top with a second tortilla.
