2 medium zucchinis, grated

1 large egg

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup mini pepperoni slices

Prepare the Zucchini: Preheat your oven to 400°F (200°C). Grate the zucchinis using a box grater and transfer the grated zucchini into a clean kitchen towel or several layers of paper towels. Twist and squeeze the towel to remove as much excess moisture as possible. This helps achieve a crispy crust that won’t be soggy.

    Make the Mixture: In a large mixing bowl, combine the drained grated zucchini with the egg, shredded mozzarella, grated Parmesan, garlic powder, onion powder, dried oregano, salt, and black pepper. Stir thoroughly until all ingredients are well combined, ensuring an even distribution of flavors.
