1 teaspoon onion powder

1 teaspoon Italian seasoning

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to make cleanup a breeze.

    Prepare the Zucchini: Grate the zucchinis using a box grater or a food processor. After grating, transfer the zucchini to a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible; this step is crucial to ensuring your nuggets turn out crispy and not soggy.

      Mix the Ingredients: In a large mixing bowl, combine the drained zucchini, breadcrumbs, grated Parmesan cheese, all-purpose flour, eggs, garlic powder, onion powder, Italian seasoning, along with salt and pepper. If you’re using parsley, fold it in now for a burst of color and flavor.

        Form the Nuggets: With clean hands, mix the ingredients until everything is well incorporated. Take approximately 2 tablespoons of the mixture and mold it into bite-sized nugget shapes. Alternatively, you can use a cookie scoop for more uniform nuggets.
