Ingredients

2 large zucchinis

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup sliced pepperoni (or your choice of toppings)

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 tablespoon olive oil

Fresh basil leaves for garnish

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup simpler, line a baking sheet with parchment paper.

Prepare the Zucchini: Rinse the zucchinis under cold water and slice them in half lengthwise. Using a spoon, gently scoop out a portion of the flesh from the center to create a boat-like shape, allowing more space for your toppings.

Season the Zucchini Boats: Brush the inner sides of the zucchini halves with olive oil. Evenly sprinkle salt, pepper, garlic powder, and onion powder over the cut surfaces for enhanced flavor.

Bake the Zucchini: Arrange the zucchini halves cut-side up on the prepared baking sheet. Roast in the preheated oven for 10-12 minutes, or until they begin to soften but are not fully cooked.

Add the Sauce and Cheese: Carefully take the zucchini from the oven. Spoon 1-2 tablespoons of marinara sauce onto each half, spreading it evenly. Next, generously sprinkle the shredded mozzarella cheese and grated Parmesan on top, followed by your selected toppings such as pepperoni, olives, or bell peppers.

Season and Bake Again: Finish by lightly dusting the top with dried oregano. Return the loaded zucchini pizzas to the oven and bake for an additional 10-12 minutes, or until the cheese is melted, bubbly, and golden brown.

Garnish and Serve: Once baked, allow the zucchini pizzas to cool for a few minutes on the baking sheet. Garnish with fresh basil leaves before slicing them into bite-sized pieces and serving.

Prep Time, Total Time, Servings: 10 minutes | 30 minutes | 4 servings

Presentation Tips: Plate the zucchini pizzas on a rustic wooden board for a casual presentation or on colorful dinner plates for a more formal touch. Drizzle with extra marinara sauce around the plate for a vibrant look.
