2 medium zucchinis, spiralized or thinly sliced into ribbons

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1 bell pepper (any color), diced

1 ripe avocado, diced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

1/4 cup extra virgin olive oil

Juice of 1 fresh lemon

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 teaspoon red pepper flakes for a spicy kick

Prepare the Zucchini: If using a spiralizer, spiralize the zucchinis to create long, noodle-like strands. Alternatively, thinly slice the zucchinis into ribbons using a mandoline slicer or a sharp kitchen knife. Place the prepared zucchini in a colander and sprinkle lightly with salt. Let it sit for about 5 minutes to draw out excess moisture.

    Combine Vegetables: In a large mixing bowl, add the spiralized or sliced zucchinis. Gently incorporate the halved cherry tomatoes, diced cucumber, sliced red onion, diced bell pepper, and diced avocado, mixing carefully to avoid mashing the avocado.
